Paglia e Fieno al ragu d’Agnello - Handmade pasta combination with farro noodles and spinach noodles mix together with lamb ragu”

Wine: Verdicchio Velonesi vs. Sangiovese Castiglione del Bosco, Montalcino
Rollo di Branzino Livornese - Branzino filet, rolled with fresh herbs baked with white wine, served on a bed of fresh tomato, garlic Kalamata olives, capers, and Farrotto (Farro grain risotto)

Wine: Amarone Sartori vs. Cabernet Sauvignon Quilt, California
Trio di carne alla Bordolese - A combination of petit filet mignon, pork medallion and lamb chop, with bordelaise sauce, (mushrooms, shallots, Amarone red wine reduction sauce) served with veggies and Farrotto (Farro grain risotto)
